During the Mindful Eating Mezze Masterclass led by Dr. Sunni Patel and Rose Eskafi, participants will have the opportunity to explore a diverse array of plant-based dishes designed to tantalize the taste buds while fostering a deeper connection to the act of cooking and eating. Here's an expanded look at the dishes they'll be creating:

 

  1. Tabbouleh: A traditional Levantine salad typically made with finely chopped parsley, tomatoes, mint, onion, bulgur (cracked wheat), and seasoned with olive oil, lemon juice, and salt. Tabbouleh offers a refreshing burst of flavors and textures, making it a perfect starter for the masterclass.
  2. Aubergine and Courgette Roll-Ups: These delicate yet flavorful appetizers feature thinly sliced aubergine (eggplant) and courgette (zucchini) that are grilled or roasted until tender, then rolled up with a savory filling. The filling could include a variety of ingredients such as seasoned rice, quinoa, lentils, or a creamy vegan spread, providing a delightful blend of textures and tastes.
  3. Hummus: A beloved Middle Eastern dip made from cooked and mashed chickpeas blended with tahini (sesame seed paste), lemon juice, garlic, and olive oil. Hummus is rich, creamy, and versatile, making it a staple in many plant-based diets. Participants may have the opportunity to customize their hummus with additional flavors such as roasted red peppers, sun-dried tomatoes, or fresh herbs.
  4. Flatbread: A versatile staple in many cuisines, flatbread serves as the perfect accompaniment to the vibrant mezze creations in this masterclass. While the classic flatbread offers a simple yet satisfying base for enjoying dips and spreads, participants will have the opportunity to enhance its flavor and texture with mindful addons:

Hummus:

  • Roast Beetroot
  • Roast Peppers
  • Roast Garlic
  • Black Tahini
  • Flavored Oils (Harissa, Herb, Lemon)
  • Garnish Options (Fresh Herbs, Toasted Sesame Seeds, Sumac, Olive Oil)

Tabbouleh:

  • Herbs (Fresh and Dried)
  • Roast and Raw Veggies
  • Crispy Kale
  • Olives
  • Avocado
  • Fruits (Pomegranate, Apple, Grapes)

Aubergine and Courgette Roll-Ups:

  • Cashew-Basil Filling
  • Tofu
  • Butter Beans
  • Flavors (Miso, Pesto, Mixed Herbs, Chili, Olives)

Flatbread:

  • Herbs and Spices for Flavored Oils (Garlic, Dried Mint, Harissa)
  • Whole Spices to Add in the Bread (Cumin Seeds, Olives, Cracked Pepper)


The masterclass will incorporate a range of sensory experiences, focusing on discerning taste, texture, and aroma, complemented by carefully crafted guided meditation and sound therapy sessions. Participants will explore techniques for regulating the nervous system and discover how integrating mindful eating practices with breathwork and sound therapy can support the body's vagus nerve responses, promoting enhanced overall well-being in daily life.

 

About Dr Sunni Patel

Dr Sunni Patel is the founder of Dish Dash Deets – a company and platform focussed on health coaching, education, and food with a mission to support as many people as possible on easy and practical holistic wellbeing. He has been featured on the BBC, ITV and is called for comment regularly on BBC radio shows with regular slots on BBC Stoke and BBC Wales as well as leading press outlets. He is available for speaker sessions, recipe development and consultancy, workshops and coaching programs and can be contacted directly here.

About Rose

As a trauma-informed Mindfulness practitioner with a Masters Degree in Mindfulness & Compassion and a bachelor's in Psychology, Rose's expertise is deeply rooted in cultivating awareness, acceptance, and compassion, while bridging cultures, and fostering understanding among diverse groups.

As the Founder and Consultant of Still Chill, she's facilitated 80+ workshops, training and bespoke initiatives for various teams within renowned brands like LUSH, Snapchat and Headspace. Rose is known for her skill in curating safe and supportive spaces for crucial and sometimes challenging conversations. Most notably, Rose designed a wellbeing programme and conducted a case study in response to high burnout rates for the entire staff of LUSH Netherlands.

 

Refunds/transfers: Please understand our charity needs time to resell your tickets as we rely heavily on the income generated by our fundraising classes. We require a minimum of 14 days' notice for any cancellations or transfers once you have booked onto a class. You are also welcome to give your ticket to a friend or family member in case of last minute illness (just email classes@madeinhackney.org to let us know).
