A refreshing summer Soup to make with all your salad vegetables. No cooking required!
Ingredients
<ul><li>1kg of ripe tomatoes roughly chopped
4spring onions
2cloves of garlic
1cucumber
1red pepper
Sea salt and fresh ground pepper
2slices of bread soaked in water & dried (optional)
A few drops of tabasco (optional)
3tbsp organic cider vinegar
3tbsp</li></ul><p>Garnish:</p><ul><li>Any Olive oil of the following
Red/green pepper finely chopped
Spring onions
Basil/parsely
Cucumber</li></ul>
Instructions

Whiz all of the ingredients in the food processor, Add olive oil and bread and whiz some more, Pass the mixture through a sieve to collect the pulp, Whizz the smooth liquid again, Season to taste, Leave to chill in the fridge for 2 hours, Serve with garnish
