The avocados give this mousse its texture without overpowering the dish, and are packed with nutrients, including potassium, omega 3 and vitamin E.
Place all the ingredients in a blender and blend until everything is smooth, scraping down the sides a couple of times and blending again. You can also use an electric hand whisk.
Divide the mixture between 4 glasses or ramekins.
Place in the fridge for at least 30 minutes before serving.
