Baked aubergines in spiced oil

This delicious recipe is by our ambassador Dr Rupy from his February 2023 released recipe book COOK . 

Ingredients

Serves 5-6 people

  • 500g baby aubergines, halved lengthways
  • 2 teaspoon coriander seeds
  • 2 teaspoon cumin seeds
  • 2 teaspoon mustard seeds
  • 1 teaspoon fennel seeds
  • 1 teaspoon chilli flakes
  • 1⁄2 teaspoon black pepper
  • 4 tablespoon olive oil

Method

  1. Preheat the oven to 200C fan.
  2. Mix the aubergines, spices and oil in a roasting tin, coating the aubergine pieces well. Sprinkle with plenty of salt and bake in the oven for 30 to 35 minutes until golden.
