Pulled banana peel carnitas

These pulled banana peels are a mindblowing zero waste hack packed with umami flavours using soy, paprika and garlic.

Ingredients

  • 2 bananas, just ripe - not browned
  • ½ white onion 
  • 15ml + 15ml vegetable oil
  • 30ml soy sauce
  • 15ml maple syrup
  • ½ teaspoon chipotle paste (optional) 
  • ½ teaspoon smoked paprika
  • ½ teaspoon ground cumin 
  • ¼ teaspoon garlic granules
  • 2-3 drops vegan worcester sauce  
  • ¼ teaspoon sea salt 
  • fresh coriander to garnish (optional)

Method

  1. Wash the bananas well. Remove the banana - eat or freeze it!

  2. Cut the top and tail off the banana skin. Scoop out any remaining banana flesh. 

  3. Use a fork to shred the banana skin into thin pulled strips.

  4. Cut in half lengthwise to make shorter strips. 

  5. Mix the rest of the ingredients in a bowl and coat the pulled banana in the mixture and leave it to sit for at least 20 minutes.

  6. Peel and finely slice the onion.

  7. Heat 15ml oil in a pan then cook the onions.

  8. Once the onions are getting soft - be careful not to brown the onions too much - add the banana skin and cook for 10-12 minutes until everything is tender.
