A lovely fresh tasting side salad to go with virtually any main meal. Make this bright salad even more colourful by using golden beetroot and heritage carrots too.
Ingredients
8servings</p><ul><li>2 <p>For large beetroots
2large carrots
A handful of fresh parsley</li></ul><p>Dressing:</p><ul><li>2 teaspoons olive oil
2teaspoons vinegar
A pinch of salt
1teaspoon cane sugar
Juice of one lemon
Zest of one lemon
Black pepper</li></ul>
Instructions

Put all the dressing ingredients apart from the lemon zest in a pan and heat on a low heat to dissolve the salt and sugar. Leave to cool.

Fill a bowl with cold water and the juice of one lemon.

Grate the beetroots and carrots.

Pour over the dressing and top with the lemon zest and the chopped parsley.
