Beetroot and Carrot Salad

A lovely fresh tasting side salad to go with virtually any main meal. Make this bright salad even more colourful by using golden beetroot and heritage carrots too.

Instructions

    1. Put all the dressing ingredients apart from the lemon zest in a pan and heat on a low heat to dissolve the salt and sugar. Leave to cool.
  1. Fill a bowl with cold water and the juice of one lemon.
  2. Grate the beetroots and carrots.
  3. Pour over the dressing and top with the lemon zest and the chopped parsley.
