Easy peasy tomato sauce packed with veg, protein and gut, friendly goodies
Ingredients
<p><strong>Serves 2</strong></p><p>2 generous handful cherry toms</p><p>2 red sweet peppers</p><p>2 cups cooked yellow lentils</p><p>One third a tube of tomato paste/puree</p><p>Half a bottle of passata</p><p>Pinch of salt</p><p>2 teaspoon apple cider vinegar</p>

Roast tomatoes and peppers for around 30 minutes at 180 degrees until tender, Blend with all other ingredients, Feel free to re, heat in a pan if needed, Great served with pasta!
