Ingredients
<ul><li>A bunch of spring onions
2celery stalks
2small fennel bulbs
1litre vegetable stock
200grammes of mange tout/sugar snap peas
100grammes podded young broad beans
A bunch of chard or spinach
2small lettuces such as little gem
2tablespoons finely chopped mixed herbs such as mint
parsley
chives.</li></ul>
Instructions

Chop the spring onions, fennel and celery into small dice

Heat the oil in a medium saucepan and add the chopped ingredients until soft, Add the stock and simmer for 5 minutes, Add the peas and broad beans and cook for 1 minute, Shred the lettuce and chard and simmer for another minute, Add the chopped herbs and remove straight away from the heat, Season and ladle into bowls
