Chipotle Black Beans

A delicious healthy take on traditional Mexican re, fried beans which will leave you wanting for more...

  • 2 cans black beans (organic

Instructions

  1. 1. Gently fry the onion in the coconut oil until translucent.

    2. Once the onions are cooked, add the garlic, chipotle powder, cumin and saute for another minute or two.

    3. Add the beans to the pan with enough of the cooking juices to allow them to cook down nicely.

    4. Simmer the beans for around 20 minutes until the flavours are well developed and you have a lovely thick pot of refried style beans.

    Serve with quinoa or brown rice and a side dish of tomato salsa, cashew cream or dairy free yoghurt
