Mushroom and Okra Curry

1. Place the garlic, chilli and ginger into a blender with 3 tbspn’s of water and blend until smooth.
2. Heat the oil in a large pan.
3. Add the whole coriander and cumin seeds and allow them to sizzle for a few seconds.
4. Add the ground cumin, cardamom and turmeric. Cook for 1 minute…. Or so.
5. Add the paste from the blender, the tomatoe, mushroom, okra s and remaining water.
6. Stir well, bring to the boil , reduce the heat, cover and simmer for 5 minutes.
7. Remove the cover, turn up the heat slightly and cook for another 5, 10mins until the okra is tender.
