Nettle Risotto

Nettles are nature’s free food and one of nature’s top nutritive herbs , being a great source of vitamin A, C protein and iron. They may also help various health conditions including urinary issues and arthritis. The best time to forage for nettles is between March and April.

Instructions

  1. 1. Put the extra virgin olive oil in a large heavy based frying pan on a medium low heat.

    2. Add the shallots to the frying pan and cook gently until softened.

    3. Drain the rice and add to the pan with a pinch of salt and cook for 2 minutes, stirring all the time.

    4. Add the stock to the rice, 1 ladle at a time, waiting until the rice soaks up the stock each time and is nearly cooked (this should take around 15, 18 minutes). Add the nettles around ten minutes before the rice is cooked.

    6. Turn the heat off and leave to stand for one minute.

    7. Serve and garnish with gomasio and black pepper.
