Maafe

The dish is a reinterpretation of the ';Maafe';, a beautiful African stew with butternut squash, sweet peppers, juicy tomatoes, and peanut butter , cooked by our Chef Jordan at the Made In Hackney Community Meal Service. "In France we have a lot of African influences in the food culture. The first time I ate it was at a dinner party of my parents friend';s who are Half creole and Senegalese," says Jordan. Enjoy it!

Instructions

    1. Heat the coconut oil in a large saucepan, add the onions and ginger let it cook until for 3 minutes at medium heat and add garlic and all the spice, salt and maple syrup and let it cook for 8 mins at low heat.

      Increase the heat a little and add the sweet pepper and then the squash cook for 2, 3 minutes and add the tomatoes paste and mix, cook for 2 minutes.

      Add the tomatoes and veg stock. Bring it to a boil and reduce the heat and add the peanut butter.

      Let it cook for 25 minutes, mix occasionally.

      Remove from the heat and finish by adding the spring onions coriander and lemon zest to the top. Adding more salt if necessary.
