Buckwheat and Spelt Pancakes with Hot Damson Compote

Damson compote is always a winner and the farmers market is a good place to find them!

Instructions

  1. To make the pancakes:

    1: Combine the flours in a bowl with the baking powder and sea salt.

    2: Mix well with a whisk.

    3: Combine the milk with the oil and 1 tablespoon of the syrup.

    4: Add the milk mix to the flours whisking as you go along to avoid lumps.

    5: Pour a teaspoon of coconut oil into a hot pan and when it has melted add a little of the batter and move the pan around until the mix is covering the base.

    6: Cook on each side until it is slightly browned.

    To make the hot damson compote:

    1: Put the damsons in a stainless steel saucepan.

    2: Add ½ a cup of water and the fruit syrup.

    3: Bring the fruit to the boil then turn down the heat and simmer gently until the fruits have burst their skins and the juice is thickened.

    5: You can either strain the compote through a colander or pick the stones out.

    6: Pour the compote warm over the pancakes.
