Pulled banana peel carnitas

These pulled banana peels are a mindblowing zero waste hack packed with umami flavours using soy, paprika and garlic.

    1. Wash the bananas well. Remove the banana , eat or freeze it!

      Cut the top and tail off the banana skin. Scoop out any remaining banana flesh.

      ,

      Use a fork to shred the banana skin into thin pulled strips.

      Cut in half lengthwise to make shorter strips.

      ,

      Mix the rest of the ingredients in a bowl and coat the pulled banana in the mixture and leave it to sit for at least 20 minutes.

      Peel and finely slice the onion.

      ,

      Heat 15ml oil in a pan then cook the onions.

      ,

      Once the onions are getting soft , be careful not to brown the onions too much , add the banana skin and cook for 10, 12 minutes until everything is tender.
