𝗦𝗢𝗬𝗔 𝗕𝗕𝗤 𝗦𝗞𝗘𝗪𝗘𝗥𝗦
Put the big soya chunks into boiling hot water with some vinegar for 20min. Wash it thoroughly and squeeze the chunks to get rid of the moisture. Be careful not to break them𝗠𝗔𝗥𝗜𝗡𝗔𝗗𝗘

Make a marinade with plenty of umami. Soya sauce, tomato paste, spices. Use what you would normally use on meat + the umami source. Leave the chunks marinating for ~12 hours and make the skewers. Prepare in the barbecue, oven or even a cast iron skillet.
