Beetroot and Carrot Salad
A lovely fresh tasting side salad to go with virtually any main meal. Make this bright salad even more colourful by using golden beetroot and heritage carrots too.
Ingredients
Dressing:
- 2 teaspoons olive oil
Instructions

- Put all the dressing ingredients apart from the lemon zest in a pan and heat on a low heat to dissolve the salt and sugar. Leave to cool.

Fill a bowl with cold water and the juice of one lemon.

Grate the beetroots and carrots.

Pour over the dressing and top with the lemon zest and the chopped parsley.
