French Beans Preserved In Oil

This recipe and method can be used to preserve many things in oil: broad beans, mixed vegetables, courgettes, cauliflower , anything really!

Instructions

    1. Place the beans in a pan and add enough vinegar to cover them.
  1. Add pinch of salt, Cook for five minutes.
  2. Drain the beans (the vinegar can be left to cool and used in dressings or pickles), Pat the beans dry on kitchen paper or a clean towel, Put the herbs and flavourings into the bottom of sterilised jars.
  3. Add the beans until half way up the jar and then add the oil and more herbs until the jar is full and there are no air bubbles.

These will keep in a cool dark place for up to a year. Once the beans are eaten the flavoured oil can be used in a dressing or to dip bread in.
