Tomato Chermoula (African tomato sauce)

1: Heat a small skillet or frying pan over a high heat
2: Add the cumin and coriander seeds
3: Dry fry them until they release their aroma (about 20 seconds)
4: Transfer to a pestle and mortar and crush them down into a fine powder
5: Chop your tomatoes until they’ve broken down completely or alternatively put in a blender and pulse two or three times
6: Transfer to a bowl
7: Add all the remaining ingredients and stir
8: Keep refrigerated until ready to serve.
