Cheeky Chickpea Pancakes

A delicious protein packed and gluten free alternative to the good old wheat pancake... Way to go!

Instructions

  1. 1. In a large mixing bowl, combine chickpea flour, water and oil. Mix well, then add seasonings and chopped onions. Leave to sit for 5 minutes.

    2. Add a teaspoon of the olive oil to a non, stick pan over a medium heat.

    3. Once the pan is hot, pour batter into the pan and spread out evenly. Cook until the surface is solid, then flip over and cook on the other side. Cook for another minute, then transfer to a plate and keep warm while you cook the rest of your batter.

    4. Enjoy for breakfast with fresh avocado, hummus and tomato salsa or as a side with a lovely warm curry!
