"I will show you how to make a selection of delicious vegan cheeses and accompaniments so you can make a stunning vegan cheeseboard to enjoy during the festive season."

This masterclass will include:

  • Your ingredients, including organic nuts, and cheesecloth delivered in a box to your door (if you book by end of 29 Nov)*
  • The A to Z of making fermented and non-fermented nut cheeses
  • Making a tasty non-fermented ‘Pepper Jack’ cheese, using coconut milk, agar agar, miso and chilli flakes
  • Make a wonderful festive fermented Cranberry & Thyme fermented cheese, using organic cashews and almonds
  • Make a delicate Garlic & Herb ‘Chevre’ fermented cheese, using organic cashews, garlic and oregano
  • Learn how to make gluten free Turmeric Crackers and Fig & Hazelnut Paste during demo sessions 
  • You can enjoy the cheeses you make on Christmas Day
  • Learn about the health benefits of fermenting nuts and seeds
  • Extensive recipe pack with bonus recipes
  • Online group troubleshooting support for 3 weeks following the class 

*We can only post to UK addresses. We will post the vast majority of your ingredients but for environmental reasons will not supply staples such as small amounts of salt and pepper. If you book after this date a discounted rate will apply and you will need to source your own ingredients.

Bruna Oliveira graduated in physiotherapy in Brazil before moving to London in 2008, where she studied Naturopathy and Naturopathic Nutrition at CNM London, in order to pursue her passion for healthy and natural living. Bruna loves creating delicious recipes with the aim of inspiring people to transform their lives through making positive changes in their diet.

Pepper Jack

  • large jalapeno 1
  • red pepper flakes 1 tsp
  • apple cider vinegar 2 tsp
  • lemon juice 1 tsp
  • olive oil 1 tbsp
  • coconut milk 400 ml
  • cornstarch 6 tbsp
  • nutrional Yeast 2 tbsp
  • agar agar powder 2 tbsp
  • sea salt 1 tsp
  • garlic powder 1/2 tsp
  • white miso 1/2 tsp

Black garlic herb chevre

  • cashew nuts 2 cups
  • probiotic 1-2 capsules
  • nutritional yeast 1 tbsp
  • apple cider vinegar 1 tsp
  • dried oregano 2 tbsp
  • black garlic 1/4 clove (or regular garlic can be used)

Cranberries and Thyme

  • cashew nuts 1 cup
  • lemon juice 2 tbsp
  • nutritional yeast 2 tbsp
  • refined coconut oil 2 tbsp
  • white miso 2 tsp
  • garlic powder 1 tsp
  • sea salt 1/4 tsp
  • dried cranberries 1/2 cup
  • fresh thyme 2 springs
  • blanched almond 1/2 cup

Made In Hackney uses cereals containing gluten namely: wheat (spelt and khorasan wheat), rye, barley, oats; peanuts; all other nuts; sesame; all other seeds; soybeans; celery and celeriac; mustard; sulphur dioxide/sulphites; lupin; tomatoes and other allergens in it's classes. Our food is freshly prepared in our busy cookery school kitchen that handles allergens, so we cannot guarantee that our food and drinks are allergen-free. Even in classes where these ingredients are not being used, they will be on site in our store rooms and our equipment will have previously come into contact with them. Participants attend at their own risk.
