Dr Sunni Patel is the founder of Dish Dash Deets – a company and platform focussed on health coaching, education, and food with a mission to support as many people as possible on easy and practical holistic wellbeing. He has been featured on the BBC, ITV and is called for comment regularly on BBC radio shows with regular slots on BBC Stoke and BBC Wales as well as leading press outlets. 240g rolled oats
1 portion of ginger
1 bulb of garlic
100g mixed mushrooms, sliced (shiitake, oyster, or any variety you prefer)
1 large bok choy (or 2 small), chopped
1 can green or brown lentils, drained and rinsed
200g (1 small head) broccoli florets
1 red bell pepper
150g snap peas
1 large or 8 small-sized baby cucumbers, thinly sliced
1 teaspoon sesame oil
2 cloves garlic, minced
1 vegetable stock cube
4-6 cups hot water
Olive oil (or sesame oil as optional)
Sliced green onions
Crispy fried shallots
Szechuan peppercorns (optional)
