The Event

Join Bee Berrie, a twice published recipe book author, small business founder (@beesbakery) and expert plant-based baker to learn how to make an easy, tried and tested no-spread cookie dough without using refined sugar, impress shapes and faces into the dough, and make a melted chocolate decoration for the “hair”.

This class is recommended for children age 6+, with adult help, but can easily be adapted for younger kids too. Perhaps make the dough ahead of time, or bring them in at the decoration stage towards the end.

The session will include:

  • Top tips for baking with kids
  • The basics of substituting eggs and dairy out of biscuit / brownie recipes
  • A classic, no-spread and refined sugar-free cookie dough recipe, and some suggested adaptations
  • Instructions on impressing shapes and faces into the dough
  • Simple melted chocolate decoration for the biscuits, including coconut “hair”
  • Tips on fixing any wonky bakes
  • Recipe handout

The base recipe is totally personalisable, it has gluten free and cocoa powder / spice adaptations, depending on your taste. If you fancy getting really creative, you can try to create faces that look like friends and family members, or design a cookie as a gift for a friend.

NOTE: this class requires adult supervision at all times, especially in the use of the oven. No responsibility can be taken by MIH or Bee for any injuries, so please be safe!

About Bee

Bee is a twice-published author (Bee’s Brilliant Biscuits and Bee’s Adventures in Cake Decorating), an ex-microbiologist, and the brains behind the best biscuits in London. Bee has supplied bakes to Selfridges and Harrods, become an expert plant-based baker, and transitioned her business to plant-based too. She’s also a mother to a bouncy 3-year-old called Joey.

INGREDIENTS LIST

Ingredients
(Makes around ten cookies)

For the base cookie dough (vanilla, pale in colour)

  • 280 g white plain flour (for gluten free cookies, use 40g ground almonds and 240g plain GF flour mix)
  • 140 g solid vegan “butter” e.g. Naturli or Stork baking block (this must be a solid block, not a spread or margarine)
  • 140 g molasses (muscovado) or coconut sugar
  • 1 “seed egg” (1 heaped tbsp ground flax (linseed) or chia seeds, mixed with 4 tbsp water and left for a min to thicken) (NB you can grind your own seeds using a blender or a pestle and mortar
  • 2 tsp vanilla extract (optional)

Optional extras:

  • 2+ tbsp cocoa powder and a little splash of any plant milk
  • 1 tsp ground ginger and 1 tsp ground cinnamon

For the cookie “hair”:

  • Around 100g melted dairy free, plain, white or dark chocolate (most supermarket dark chocolate is DF, but check the labeling)
  • Desiccated coconut, edible seeds e.g. poppyseeds, ground coffee, tea from a teabag, muscovado sugar

EQUIPMENT LIST  

  • 2 x baking trays (lined with parchment if you have it)
  • Weighing Scales
  • Round or square cookie cutters or a clean, small plastic beaker / cup
  • Rolling pin, or the flat side of an empty glass bottle if you don’t have one
  • One large mixing bowl and mixing spoon 

An assortment of items for making impressions in the dough to create faces:

  • A chopstick or a cocktail stick for the eyes
  • A teaspoon or blunt edge of a round cookie cutter for the smile
  • A butter knife / edge of a spatula for a straight mouth
  • The points of a fork for a stubbly chin
  • Your creative ideas!

Refunds: we require a minimum of 24 hours' notice for any cancellations or transfers once you have booked onto a class. Unfortunately we cannot share recordings of classes as they also feature participants and we do not have their permission.
