3 Ingredient Chocolate Mousse

This mousse is so simple yet decadent and delicious. However, it is not to be eaten everyday due to its rich ingredients. These recipes were created by Chef Sharon Gardner as part of our 5 Ingredient Community Cookery Course. The recipes do not include in the count of 5 pantry staples such as olive oil, salt and pepper and other seasonings. 

Ingredients

  • 200 millilitres of coconut milk (one with high coconut percentage and no more than 3 ingredients)
  • 100 grams of good quality dark chocolate (at least 70% cocoa)
  • 2-3 tablespoons of date syrup or sweet freedom fruit syrup to reduce bitterness
  • Optional - berry compote and additional coconut cream to serve

Method

  1. Add the coconut milk to a small saucepan and place on a low heat to warm through. In the meantime, break the chocolate into small pieces, and once the coconut milk is warm remove from the heat and add in the chocolate.
  2. Stir the chocolate into the coconut milk and allow it to melt. Taste and if needed add 1 tablespoon of the syrup, mix in taste and add up to 2 more tablespoons if needed. Pour the mixture into 3 ramekins, leave and place into the fridge to cook and set.
  3. Remove from the fridge 10-15 minutes before ready to serve to allow it to come back to room temperature. Enjoy.
  4. Feel free to add a layer of berry compote and whipped coconut cream to serve.
