A mouth explosion of a dessert/breakfast bowl from our teacher and amazing food blogger Ellie of Kind State Of Mind.
1 frozen banana (frozen in chunks)
100 grams frozen raspberries
100 mililitres unsweetened non-dairy milk
Maple syrup
Toppings of your choice: Try nuts and seeds, fresh fruit, chia seeds, nut butters, cocoa nibs, chocolate, sprinkles.. or anything else you fancy.
1. Place all ingredients, except the toppings, into a blender or food processor. Start on low and slowly increase the speed. If you have a blender with a tamper you can use it to push the fruit into the blades. If not then you may need to stop to quickly scrape down the sides a few times. If you’re having trouble getting things moving then add more milk to help it to blend. The more milk the easier it will be, but it might be more of a smoothie bowl than nice-cream if you add too much – still delicious but less solid!
2. Once the mixture is smooth, with no chunks of fruit remaining pour and scrape all the frozen mixture into a bowl and decorate your bowl with toppings.
