Cashew sour cream  

How to make a colourful, flavour and nutrition-packed dish that puts plants at the centre of the plate all whilst minimising waste and centring seasonal produce.

Ingredients

  • 165g cashews, soaked for at least 15 minutes in hot water beforehand
  • 30-40ml water 
  • 30ml lemon juice
  • 3 tablespoons nutritional yeast
  • 1 clove garlic 
  • ¼ teaspoon salt 

 

Method

  1. Put all the ingredients in a blender - adding water a tablespoon at a time.
  2. Then blend until you have a smooth dressing.
  3. Taste and adjust salt/lemon if required.
