Chocolate coconut torte

To celebrate mother's day, our social media assistant Nav made her mum a chocolate coconut torte inspired by her mum's favourite chocolate bar!

Ingredients

Chocolate base:

  • 100g softened pitted dates
  • 80g oats
  • 25g cacao powder
  • 10g dessicated coconut

Coconut cashew layer:

  • 65g cashews
  • 20g softened pitted dates 
  • 105g silken tofu
  • 20g desiccated coconut
  • A tablespoon full fat coconut milk from a can (refrigerate the can for a few hours)

Chocolate topping:

  • 140ml full fat coconut milk from a can (refrigerate the can for a few hours)
  • 55g your fav chocolate 
  • Sprinkle of desiccated coconut

Method

Base layer:

  1. Put the pitted dates in a bowl and cover with boiling water.
  2. In a blender, add oats with the softened dates, cacao powder, desiccated coconut and a few drops of water from the dates.
  3. Spread the blended mixture into your tin of choice.

Coconut cashew layer

  1. Put the cashews and pitted dates in a bowl  and cover with boiling water.
  2. In a blender, add the cashews and dates along with coconut milk, desiccated coconut and silken tofu.
  3. Pour the blended mixture over the base.

Chocolate topping

  1. Pour the coconut cream into a saucepan on a low heat.
  2. Add in chocolate broken into pieces.
  3. Stir until all the chocolate is melted.
  4. Pour over the coconut cashew layer.
  5. Sprinkle some desiccated coconut on top.
  6. Place in the fridge until ready to eat.
