This recipe for a deccadent chocolate pistachio torte was created by our programmes assistant, Nav. A delicious and nutritious treat to enjoy this Veganuary, it's an indulgent dessert which is naturally sweetened with dates and helps you reach your daily recommended amount of iron.
200g pitted dates
75g oats
200g silken tofu (not firm tofu!)
30g cacao powder
50g tahini (or nut butter)
2 tablespoons of crushed pistachios
1. Put the dates in a bowl and cover with boiling water until softened
2. Blend just over half the dates with the oats
3. Pour the date/oat mix into a dish to form the base of the tart
4. Blend the silken tofu, cacao powder and tahini with the rest of the dates
5. Spread the mixture over the base
6. Crush a handful of pistachios and sprinkle on top to decorate
7. Refrigerate for a few hours until ready to serve
