Coconut pistachio tart

Sprinkling a tart with pistachio to make it look fancy is a simple but effective tip for presentation.

Ingredients

Base:

  • 150g pitted dates
  • 100g oats
  • 22g desiccated coconut

Topping:

  • 200g silken tofu
  • 75g pitted dates
  • 65g desiccated coconut
  • 30g pistachios

Method

  1. Pour boiling water over all of the dates until softened
  2. Blitz the oats with desiccated coconut and dates in a blender
  3. Spread the base in a cake tin
  4. For the topping, blend the tofu, dates and coconut
  5. Spread the topping over the base
  6. Crush the pistachios and sprinkle on top
  7. Refrigerate until ready to serve
