The Plant-Based Community Cookery School
Elderberry juice and syrup is traditionally used to ward off coughs and colds in the autumn. They are packed full of anti-oxidants and vitamins A, B and C - and they are free! Make sure you pick them when they are drooping on the plant - that means they are ripe.
Thats it!
1: Remove the elderberries from their stalks with a fork
2: Wash the elderberries in a bowl of water, taking out any under ripe berries
3: Place the berries in a large heavy based pan with enough water to cover them
4: Bring the berries to the boil then turn off the heat and let them stand for 3 hours or overnight
5: Strain off the juice and keep it in the fridge.
It will keep for a week
For treating colds and flu warm the juice in a saucepan with lemon juice. Drink twice a day.
Elderberry juice can also be drunk as a cordial diluted with water and mixed with lemon and sweet freedom (or other healthier sweetener alternative) to taste.
