Falafel

Ingredients

  • 500 grammes of pre-soaked Fava beans
  • 1 onion
  • A big bunch of coriander leaves
  • 1 red chilli pepper
  • Zest of two lemons
  • 10 mint leaves
  • 3 pinches of salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon cayenne pepper
  • 1 teaspoon ground cumin
  • ½ teaspoon ground cinnamon
  • Olive oil

Method

  1. Set the oven to 200 degrees centigrade
  2. Chop the herbs, chilli and onion. Mix with the beans, spices and lemon zest
  3. Pulse in a food processor until smooth but not a paste
  4. Roll balls the size of a ping pong ball and roll in the sesame seeds
  5. Place on a baking sheet and brush with oil
  6. Bake for 15 minutes on each side until brown
