Fluffy Pancakes

Fluffy Pancakes

Extremely quick and easy to make American style fluffy pancakes. Serve with fresh berries or berry compote and lots of maple syrup!

Ingredients

(makes approx 18 small pancakes)

120g wholegrain spelt flour

120g white spelt flour

2.5 tablespoons cornflour or arrowroot powder

2.5 teaspoons baking powder

1 tablespoon maple syrup (optional)

2 teaspoons cider vinegar

300g oat or hemp milk

50g coconut oil

1 teaspoon vanilla extract

1/4 teaspoon salt

To serve: Maple syrup, fresh fruit/berries or fruit compote

Method

  1. Mix dry ingredients together in a large mixing bowl.
  2. Put a medium sized sauce pan on a medium heat and add all the wet ingredients, except for cider vinegar.
  3. Once coconut oil melted mix wet and dry ingredients together and add cider vinegar. Using a whisk mix thoroughly until mix has no lumps and texture is runny but thick.
  4. Bring a large frying pan on a medium heat. Once hot, ladle ¼ cup of the batter onto the dry pan and cook for 30-40 seconds until the top part of the pancake is dry, before carefully flipping onto the other side. Cook for another 40 seconds.
  5. Repeat the same process with the rest of the batter. Serve and enjoy!
