Gazpacho

Gazpacho

A refreshing summer soup to make with all your salad vegetables. No cooking required!

Ingredients

  • 1kg of ripe tomatoes roughly chopped
  • 4 spring onions
  • 2 cloves of garlic
  • 1 cucumber
  • 1 red pepper
  • Sea salt and fresh ground pepper
  • 2 slices of bread soaked in water & dried (optional)
  • A few drops of tabasco (optional)
  • 3 tbsp organic cider vinegar
  • Olive oil 3 tbsp

Garnish:

  • Any of the following
  • Red/green pepper finely chopped
  • Spring onions
  • Basil/parsely
  • Cucumber

Method

  1. Whiz all of the ingredients in the food processor
  2. Add olive oil and bread and whiz some more
  3. Pass the mixture through a sieve to collect the pulp
  4. Whizz the smooth liquid again
  5. Season to taste
  6. Leave to chill in the fridge for 2 hours
  7. Serve with garnish
