Ingredients

  • 300 grammes chick peas
  • 2 garlic cloves
  • 2 spring onions
  • Juice of one lemon
  • 3 tablespoons tahini
  • 1 teaspoon ground cumin
  • A handful of parsley
  • 1 tablespoon olive oil
  • 3-5 tablespoons water
  • Salt, to taste

Method

  1. Put the chickpeas in a blender and blend to a smooth paste, adding water as you go along.
  2. Peel the garlic and chop the spring onion into slices
  3. Add the garlic, lemon juice, spring onions and tahini to the blender.
  4. With the machine running add a tablespoon of olive oil,
  5. Add the cumin and the parsley
  6. Season with salt and pepper.
  7. Empty into a bowl and cover with a glug of olive oil and sprinkle with paprika
