Nutrition Boosted Tomato Sauce

Easy peasy tomato sauce packed with veg, protein and gut-friendly goodies

Ingredients

Serves 2

2 generous handful cherry toms

2 red sweet peppers

2 cups cooked yellow lentils

One third a tube of tomato paste/puree

Half a bottle of passata

Pinch of salt

2 teaspoon apple cider vinegar

Method

  1. Roast tomatoes and peppers for around 30 minutes at 180 degrees until tender
  2. Blend with all other ingredients
  3. Feel free to re-heat in a pan if needed
  4. Great served with pasta!
