The Plant-Based Community Cookery School
This wonderful spicy nutty crumble is easy to make and will brighten the greyest of days.
1 cup of ground almonds
1 1/2 cup oats
2 tablespoon crushed walnuts
3 tablespoon coconut oil
1 teaspoon cinnamon
1/4 teaspoon ground cardamon
1 teaspoon grated ginger
8 apples
1/2 cup maple syrup
1. Peel the apples and remove the core, cutting them into bite-sized pieces.
2. Put the apples into a saucepan with 2 tablespoons of filtered water. Cook gently on a medium heat for about 8-10 minutes until soft but still retaining colour and bite.
3. Transfer to a baking dish.
4. Use the saucepan to melt the coconut oil, add the maple syrup, cinnamon, cardamom and ginger. pour this over the oaty almond mixture and stir well until all the dry ingredients are coated with the coconut oil mix.
5. Distribute the topping mixture over the apples.
6. Sprinkle the walnuts evenly on top of the crumble and bake until golden (20-30 minutes).
Serve with dairy free coconut yoghurt :-)
