Oven baked pakoras

These tasty Indian vegetable fritters are traditionally deep fried but in this recipe, we bake them in the oven. A delicious and easy to make snack, why not try to make them yourself? Recipe by our social media assistant Nav.

Ingredients

  • Thinly sliced swede (or potato if you want to be traditional)
  • Sliced carrots
  • 1 stick of celery sliced lengthways (or onion if you want to be traditional)
  • A handful of chopped spinach
  • 2-3 tablespoons plain plantbased yoghurt
  • 2-3 tablespoons chickpea/gram flour
  • 1 tablespoon tomato puree
  • Seasoning-turmeric, chilli, ginger, cumin seeds, masala, pink Himlayan sea salt

Method

  1. Finely slice and steam the swede/carrots/celery.
  2. Mix all the ingredients in a blow.
  3. Bake for about 20 minutes until crisp and brown.
  4. Serve with a chutney/ketchup/chilli sauce.
