These pulled banana peels are a mindblowing zero waste hack packed with umami flavours using soy, paprika and garlic.

Wash the bananas well. Remove the banana - eat or freeze it!
Cut the top and tail off the banana skin. Scoop out any remaining banana flesh.
Use a fork to shred the banana skin into thin pulled strips.
Cut in half lengthwise to make shorter strips.
Mix the rest of the ingredients in a bowl and coat the pulled banana in the mixture and leave it to sit for at least 20 minutes.
Peel and finely slice the onion.
Heat 15ml oil in a pan then cook the onions.
Once the onions are getting soft - be careful not to brown the onions too much - add the banana skin and cook for 10-12 minutes until everything is tender.
