The avocados give this mousse its texture without overpowering the dish, and are packed with nutrients, including potassium, omega 3 and vitamin E.
2 ripe avocados
4 tablespoons of cocoa powder
70ml maple syrup
4 tablespoons melted coconut oil
1 teaspoon vanilla essence
Pinch sea salt (optional)
To Decorate
Berries, edible flowers - whatever is in season!
1: Place all remaining ingredients in a blender and blitz until everything is smooth, scraping down the sides a couple of times and blitzing again. You can also use an electric hand whisk.
2: Divide the mixture between 4 glasses or ramekins.
3: Place in the fridge for at least 30 minutes before serving.
