Soda Bread With Seeds

This is such a quick and easy bread recipe, it's always hugely popular here at Made in Hackney.

Ingredients

  • 250 grammes plain flour
  • 250 grammes wholemeal flour
  • 400 mililitres dairy free yoghurt
  • 2 tablespoons each of: sunflower, pumpkin, sesame and poppy seeds
  • 1 tablespoon fennel seeds
  • 2 teaspoons bicarbonate of soda
  • 1 teaspoon sea salt

Method

  1. Set the oven to 200 degrees celcius/gas mark 5
  2. Sift the flour and bicarbonate of soda into a large mixing bowl
  3. Stir in the salt and the seeds
  4. Make a well in the centre and pour in the yoghurt stirring as you go. You should have a soft, slightly sticky dough
  5. Tip the dough out onto a lightly floured work surface
  6. Put the round of dough on a lightly floured baking sheet and mark a deep cross in it with a serrated knife
  7. Brush with the leftover yogurt inside the pot and sprinkle on the rest of the seeds
  8. Bake in the oven for 40 to 45 minutes until the loaf sounds hollow when tapped underneath
  9. Cool on a wire rack for five minutes
