The Plant-Based Community Cookery School
This delicious recipe comes from our ambassador Dr. Rupy Aujla's fantastic new book The Doctor's Kitchen.
Serves 2
2 apples, peel removed in long, thin strips
2 teaspoons coconut oil
2 teaspoons ground cinnamon
2 teaspoons coconut sugar
20 grams unsalted, shelled pistachios, toasted and finely crushed
400 mililiters water
Large piece of cinnamon bark or cinnamon stick
3 cloves
4 thin slices of fresh root ginger (with skin on)
4 black peppercorns (or ½ teaspoon ground black pepper)
Generous pinch of freshly grated or ground nutmeg
4 green cardamom pods, lightly crushed
3 tablespoons maple syrup
1. Preheat the oven to 200°C/180°C fan/gas mark 6.
2. Rub the apple peel with the coconut oil, cinnamon and coconut sugar.
3. Place the peel in a small roasting tin and bake for 8 minutes, or until lightly browned.
4. Remove from the oven and allow to cool.
5. The peel may still be slightly moist despite being nicely coloured, but it will firm up when cool and become crunchy. Roughly chop the peel, mix it with the crushed pistachios and set aside.
6. Pour the water into a saucepan with the cinnamon, cloves, ginger, peppercorns, nutmeg, cardamom and maple syrup. Bring to a simmer and add the whole apples.
7. Cover the pan with baking parchment and close the lid tight over it so no steam escapes. Cook over a low heat for 20 minutes, and then remove from the heat.
8. Transfer the apples to a bowl with a slotted spoon and continue to reduce the liquid until you have about 100 mililiters left.
9. Serve the warm cooked apples drizzled with the chai syrup and top with the apple ‘crunch’ and crushed pistachios.
