Ugu and Pineapple Juice

Ingredients

Serves 2

• Ugu (fluted pumpkin leaves) vegetable.

• 1 small pineapple.

• 2 limes.

• 1/2 cup of water 

Method

  1. Using a large mixing bowl, add in water and the ugu leaves then wash to remove any present dirt and sand.
  2. Use a sharp knife to cut the pineapple into smaller chunks then place them into a food processor.
  3. Add in the ugu leaves and squeeze of lime juice.
  4. Blend until the mixture becomes smooth. 
  5. Let the juice chill in the fridge for a few minutes then serve.
